Looking for a healthy and delicious summer breakfast idea? This bircher bowl is just the ticket. Used tinned peaches, or you can opt for fresh ones which are in season during the summer months…
INGREDIENTS:
- 100g oats
- 2 tbsp chia seeds
- 1 tbsp mixed seeds (such as pumpkin, sunflower, linseed)
- 350ml milk
- 1 tbsp goji berries
- 1 tbsp maple syrup
- 1 tsp vanilla extract
- 1/2 tin of peaches in juice (roughly 200g)
- 2 tbsp yoghurt
METHOD:Â
1/ Stir the oats, seeds, maple syrup, vanilla, goji berries, and milk in a large bowl or Tupperware. Cover and refrigerate overnight.
2/ In the morning, serve the oat & seed bircher with a dollop of yoghurt, tinned peaches, and a few goji berries. Drizzle some peach juice over the top and enjoy.
